Ingredients

Egg Whites 3 oz

Soy Yogurt 4 fl oz

Rice Flour 1 oz

Oat Flour 2 oz

Nut Mix 2 oz

Baking Powder 5 gr


Preparation

To prepare this Carrot and Dried Fruit Cake, follow these steps:

  1. Whip egg whites to stiff peaks and set aside.

  2. Mix yolks with flours, baking powder, sweetener, grated carrot, and oil.

  3. Gently fold in whipped egg whites and chopped nuts.

  4. Pour batter into greased loaf pan.

  5. Bake at 355°F (180°C) for 20 minutes.

  6. Cool completely before slicing.
