1. Prepare mango puree:

   • Peel and dice mangos

   • Mash into smooth puree

     
     

2. Cook mixture:

   • Heat puree in pan

   • Whisk in agar-agar

   • Stir constantly for 5 minutes

     
     

3. Whip mixture:

   • Transfer to mixing bowl

   • Beat for 15 minutes

   • Until light and voluminous

     
     

4. Set dessert:

   • Pour into mold

   • Refrigerate 4+ hours
