Ingredients
Dehydrated Dates 1.5 Cups
Almonds 3/4 Cup
Cashews 3 Cups
Lemon 1 unit
Maple Syrup 4 tablespoons
Coconut Cream 1 Cup
Preparation
To prepare this Almond Cheesecake, follow these steps:
Soak cashews in hot water for 30 minutes, then drain.
Process almonds, dates and salt into crust mixture.
Press firmly into cake pan and refrigerate.
Blend soaked cashews, coconut cream, lemon juice and maple syrup.
Pour filling over crust and freeze 4+ hours.
Optional Topping
Blend fruit with plant milk, spread over set cheesecake, and freeze 5 more hours.
