Ingredients:
For the arepa:
Egg whites: 7 fl oz / 200 ml
Oat flour: 1 oz / 30 g
Protein powder (neutral or vanilla): 0.7 oz / 20 g
(Optional) A dash of vanilla or caramel essence
For the filling:
Oat flour or finely ground oats: 0.5 oz / 15 g
Cocoa powder (unsweetened): 1 tablespoon
Protein powder (chocolate or vanilla): 1 tablespoon
Vegan milk (almond, soy, etc.): 1.5 fl oz / 50 ml
✍️ Instructions
Prepare the arepa dough: In a mixing bowl, combine the egg whites, oat flour, protein powder, and a bit of vanilla or caramel essence if using. Mix until a soft dough forms.
Shape the arepas: Divide the dough into small portions, roll them into balls, then flatten each one into an arepa shape (like thick pancakes).
Cook the arepas: Heat a non-stick pan over medium heat and lightly grease with oil or butter. Cook each arepa until golden on both sides, just like you would with pancakes.
Make the chocolate filling: In a separate bowl, stir together the oat flour, cocoa powder, protein powder, and vegan milk. Mix until smooth and creamy.
Assemble and finish cooking: Carefully cut each arepa open or press a bit of the filling inside using more dough to close them. Return the filled arepas to the pan and cook for another 1-2 minutes per side, just enough to warm the center and finish the texture.
Let cool slightly and enjoy! Best served warm for a gooey, chocolatey treat.
