Vegan arepa "reina"

Ingredients

Corn flour:
Tofu:
Avocado:
Soy yogurt:
Onion:
Garlic:
Lemon:
Cilantro:

1 cup
7 oz / 200 gr.
1 unit
3 tablespoons
1/2 unit
1 clove
1/2 unit
2 sprigs

Instructions

1. Dissolve one teaspoon of salt in 1 cup and 1]/4 cup of water.
2.Add the cornmeal and mix until you get a kneadable consistency.
3. Knead for 4 more minutes and let rest.
4. On the other hand, chop the vegetables and mix them with the tofu (diced), yogurt, lemon juice and a little salt.
5. With the dough, make buns and flatten them to form the arepas.
6. Bring them to a frying pan, over medium heat, with a little olive oil, until golden brown on both sides.
7. Remove the arepas from the heat and, with the help of a knife, partially open them.
8. Fill them with the vegetable and tofu mixture.
