Gratin eggplant (vegan)

Ingredients

Eggplants:
Fried tomato sauce:
Coconut cream:
Vegan cheese:

2 units
1/2 can
3 tablespoons
3.5 oz / 100 gr.

Instructions

1. Cut the ends of the eggplants, and then cut them lengthwise in half.
2. Make superficial cuts so that they absorb the other ingredients better.
3. Put them in a microwave-safe container. Season with salt and pepper to taste, and drizzle with a little vegetable oil.
4. Put them in the microwave for 7 minutes.
5. Once the time has passed, remove them from the microwave and add the tomato, coconut cream, and grated vegetable cheese to your liking.
6. Then return them to the microwave for two more minutes.
7. Be careful when removing the container because it will be hot. Let it rest at room temperature before serving.
