Ingredients

Buckwheat:

14 oz / 400 gr.

Instructions

1. Soak the buckwheat seeds in plenty of water for 8 hours.
2. After this time, rinse the seeds several times and drain them.
3. Transfer the buckwheat to a blender and add 7 fl oz of water and 1 tablespoon of olive oil.
4. You can add your preferred spices.
5. Mix until you get a consistent dough.
6. Let the dough ferment in a bowl, covered with a cloth, for 12 hours, until it doubles in size. The fermentation will depend on the climate, so if it's summer, check because the process may finish in less time.
7. After this time, bake at 180ºC/355ºF for approximately 45 minutes.
8. Check for doneness and let it cool at room temperature.
