Mix the baseIn a bowl, combine the chickpea flour, paprika, smoke powder, and a pinch of salt. Add 12 tablespoons of water and stir until you get a creamy, slightly thick batter.
Add the fillingsFold in the cooked lentils, boiled rice, diced red pepper, and vegan cheese. Mix until everything is evenly distributed and coated with the batter.
Cook the crêpesHeat a non-stick frying pan over medium-low heat and add a little olive oil. Spoon portions of the mixture into the pan, shaping them into small round crêpes with a spatula. Think savory pancakes, not thin French crêpes.
