These Lentil Crêpes are not your typical light French-style crêpes — they’re thicker, heartier, and loaded with good stuff like lentils, rice, bell pepper, and vegan cheese. Spiced with paprika and smoke powder, these golden rounds are perfect as a main dish, a wrap base, or even a protein-rich snack. Plus, they’re naturally gluten-free and budget-friendly!

Makes 4–6 thick crêpes

  • Chickpea flour: 3 tablespoons (approx. 25 g)

  • Paprika (sweet or smoked): 1 teaspoon

  • Smoke powder (or a dash of liquid smoke): 1 teaspoon

  • Cooked lentils: 1 cup (approx. 170 g / 6 oz)

  • Cooked white rice: 1 cup (approx. 150 g / 5 oz)

  • Red bell pepper: ½ cup (diced – approx. 75 g / 2.5 oz)

  • Vegan cheese (grated or cubed): ½ cup (approx. 60–70 g / 2.5 oz)

  • Water: 12 tablespoons (approx. 180 ml / 6 fl oz)

  • Salt & olive oil: to taste


👨‍🍳 Instructions


  1. Mix the baseIn a bowl, combine the chickpea flour, paprika, smoke powder, and a pinch of salt. Add 12 tablespoons of water and stir until you get a creamy, slightly thick batter.

  2. Add the fillingsFold in the cooked lentils, boiled rice, diced red pepper, and vegan cheese. Mix until everything is evenly distributed and coated with the batter.

  3. Cook the crêpesHeat a non-stick frying pan over medium-low heat and add a little olive oil. Spoon portions of the mixture into the pan, shaping them into small round crêpes with a spatula. Think savory pancakes, not thin French crêpes.

  4. Flip carefullyCook each side for about 3–4 minutes, or until golden and firm enough to flip. Turn over and cook for another 2–3 minutes until browned and cooked through.

  5. Serve hot or warmEnjoy as-is, or pair with a simple side salad, vegan yogurt dip, or wrap in lettuce leaves for a light meal.
