Seitan with bread flour

Ingredients

Strong wheat flour:

17.5 oz / 500 gr.

Instructions

1. In a container, mix the bread flour with 7 fl oz of water.
2. Mix until you get a consistent dough.
3. Transfer the dough to a container and knead for 25 minutes under a thin stream of water, trying to remove as much starch as possible.
4. It will be ready when the water stops coming out whitish.
5. Shape the dough into a sphere.
6. Bring a pot to medium-high heat and add plenty of water, vegetable broth, soy sauce, salt, pepper and spices to your taste.
7. When it starts to boil, add the dough and let it cook for approximately 50 minutes.
