Watermelon:

Apple cider vinegar:
21.0 oz. / 600 gr.
7 oz. / 200 gr.
10 fl oz / 300 ml.
Instructions
1. From the watermelon, you only need the rind. You can use the pulp in other preparations.
2. Cut the watermelon rind into sticks, making sure to completely remove the green skin and the red fruit.
3. Heat a pot over low heat, add 10 fl oz of water, apple cider vinegar, sugar, two tablespoons of salt, plus your preferred spices, we recommend pepper, chili, and thyme.
4. Cook for a couple of minutes until the sugar is completely dissolved.
5. Transfer the watermelon to a glass container, add the brine, making sure to completely cover the sticks.
6. Once it reaches room temperature, cover and refrigerate for a couple of hours.
7. It can last a couple of days refrigerated and is ideal for salads or simply as a side dish.
