Ingredients

Tomato:
Agave syrup:
Purple onion:
Apple cider vinegar:
Cloves:
Ginger:
Cumin:
Garlic:
Paprika:
Celery:

2 kilograms
3 tablespoons
1/2 unit
2 tablespoons
1 unit
1 slice
1/2 teaspoon
2 cloves
1/2 teaspoon
1 leave

Instructions

1. In a saucepan, with a lid, put the tomatoes, onion, garlic, cloves, ginger, cinnamon, cumin. Add a little water, don't cover the ingredients.
2. Bring to a boil over medium heat.
3. When they are at boiling point, turn the heat down to low and cook for an additional 5 minutes.
4. Turn off the heat, remove the lid and let sit at room temperature for 30 minutes.
5. Crushes very well.
6. Strain the mixture and bring it to low heat again.
7. Add the honey, mustard, paprika, vinegar and salt to taste. Stir constantly.
8. Cook for a couple of minutes, until reduced. Stir constantly.
9. Turn off the heat, let it sit at room temperature. Store in the refrigerator, in a container with a lid.
