Chickpea Yogurt

Ingredients

Chickpeas:
Vanilla sweetener:
Lemon juice:
Mixed berries:

1 cup
1/2 teaspoon

1/3 cup

Instructions

1. Soak the chickpeas in plenty of water for 2 days in the refrigerator.
2. Remove the chickpeas, rinse them very well.
3. Transfer the chickpeas to the blender and process them with 1 liter of water.
4. Pass the mixture through a straining cloth.
5. Cook the resulting liquid over low heat. Stir constantly to prevent it from sticking to the pot.
6. Once the liquid is thick, pour it into a glass container.
7. Let it cool at room temperature and then refrigerate for 24 hours.
8. After this time, add the lemon juice, sweetener of your choice, mixed berries, and vanilla essence.
9. Process everything with an immersion blender until you get a consistent mixture.
