Chickpea and onion cheese:

Ingredients

Chickpeas:
Onion:
Garlic:
Lemon juice:

2 cups
1 unit
4 cloves
2 tablespoons

Instructions

1. Soak the chickpeas in plenty of water for 8 hours.
2. Transfer the chickpeas to the blender.
3. Add the lemon juice, onion, garlic cloves, 1 cup of water, 1 tablespoon of salt and 2 tablespoons of olive oil.
4. Process very well until you get a homogeneous mixture.
5. You can add your preferred spices and seasonings.
6. Heat a pan over medium heat, pour in the mixture and cook for a couple of minutes.
7. Stir the mixture with folding movements until you get a consistency similar to a dough.
8. Pour the preparation into molds (previously greased).
