Cafeteria-style lemon cake

Ingredients

Sugar:
Lemon:

Wheat flour:

Dairy milk:
Icing sugar:

Instructions

1. In a bowl, combine the sugar, lemon zest, and butter.
2. Mix well and carefully add two teaspoons of vegetable oil.
3. Mix in the eggs and lemon juice until the mixture is homogenous.
4. Add the flour (sift with a strainer), baking powder, and a pinch of salt.
5. Use a spatula to mix in an enveloping manner. Add the milk gradually and continue to stir.
6. Pour the mixture into the mold and bake in the oven for 50 minutes at 160°C/325ºF.
7. After the time has passed, remove it and set it on a rack at room temperature.
8. For the glaze, use a mixer to combine the icing sugar and the juice of two lemons until the mixture is homogeneous.
9. Spread the glaze on top of the cake.
